The Happy Hippie is serving up some amazing Acai Bowls, smoothies, Avocado toast and so much more! The Happy Hippie is bringing Manhattanites another healthy food option while offering great portions and tons of flavor!

If you need me from now on, you will find me here, at the Happy Hippie in Manhattan, KS. I was super excited to have another great option for healthy food in town, but after I tried it I was blown away. The Happy Hippie is located in Aggieville in the former Public Hall location (1205 Moro St.)! This is the second location for Happy Hippie, their original location is in Clay Center, KS. Since opening, Happy Hippie has been receiving rave reviews so I knew I needed to try it for myself!

On my first venture to Happy Hippie, I ordered a variety. I ordered the PB and J Acai bowl, Avocado Toast, and a Smoothie, and I also tried their salad bar. While the staff was making my order I went to the salad bar to see what goodies were waiting for me. While the overall size of the salad bar is not huge the amount of options, toppings, and dressings to choose from blew me away! Before I knew it my container was packed full! Everything was fresh and many items were chopped small which for me is how I like to eat a salad, it allows you to get a little bit of everything in a bite!

The staff brought the remaining items in my order and my next item to try was the infamous, Acai Bowl. I have never been a huge Acai Bowl person, not sure why, it just has never been my go-to thing. Today, that all changed! First off, this portion is huge and I only ordered the lil' bowl! This bowl consists of Acai, Strawberry, banana, and house-made granola and is then topped with a peanut butter drizzle and coconut shreds! I am not sure I could completely put into words how good this bowl is. It is thick and creamy but also so cold that it almost reminds you of ice cream! Every topping is perfect as it provides just the right texture and balance to the bowl, even the coconut! This fact is coming from someone who does not like coconut, at all! Well, today, thanks to this absolutely perfect Acai Bowl, I am questioning whether I do or don't like coconut! LOL

I have always been a huge fan of avocado toast and eat it normally a couple of times a week at home. Well, after trying the Happy Hippie's Avocado Toast, I am going to need to step up my game at home. Happy Hippies Avocado Toast is, of course, avocado that is on perfectly toasted Sprouted Grain bread, topped with Everything But the Bagel seasoning and then microgreens! I mentally had to tell myself to slow down while I was eating, it was so good!

The smoothie was for my hubs so it was pretty traditional, strawberry, banana, pineapple blended in orange juice! I did sneak and taste and it was very refreshing and while I was worried it might be too sweet I did not find that to be the case at all!

After one trip I know I am going to be a Happy Hippie regular! If you went when it was Public Hall, the set up is very similar, there is a variety of tables inside, bar seating, or if you want to enjoy the outdoors, you can enjoy your food and drinks on the spacious covered patio!

For those who might not be able to make it down to Aggieville, the Happy Hippie website offers a delivery option as well on their website! While this could be dangerous for me, I am pumped to be able to have this option on days when I am super busy but don't want typical fast food!

If you have been reading any of my blogs then you know how important I think the staff is and the staff at Happy Hippie were very so kind and super helpful and patient as I was ordering. They knew the menu well and easily answered me with what my best option would be on their menu. In fact, when I ordered I asked about an Italian sandwich that I thought I noticed on social media. The staff was pleasant and said they didn't think so, but their current salad bar was an Italian salad bar. I said perfect, I will take that! For me, the conversation was over, but they went above and beyond to come over to me later and explain that they don't have sandwiches yet, but that I most likely was on their Clay Center Happy Hippie Facebook page! For me, that was definitely above and beyond and very much appreciated!

When I go back, most likely tomorrow! HA! I already know my next order! Of course, I am starting off with another Acai Bowl, because I am now going to become a connoisseur of Acai Bowls and they all will be compared to Happy Hippies! Then I am going to need to give their breakfast burrito a try and there is no way I am leaving without a bag of their homemade granola, it is literally granola perfection!

The Happy Hippie's owner is Erin Hammel. Although I have never met Erin in person, I have heard a lot of awesome things about this young entrepreneur.
