If you’ve spent any time in Manhattan, Kansas lately, you’ve probably heard the buzz about Bootsies—and I’m here to confirm it is worth the hype. Located right in the heart of Aggieville at 1227 Bluemont Avenue, Bootsies is bringing big flavor, nostalgic vibes, and a little foodie magic to town. Whether you’re catching up with friends, looking for your next brunch spot, or craving something that hits all the salty-sweet-spicy notes, Bootsies delivers.

For those long-time Manhattanites, you will remember the beloved Coco Bolo's that used to be in the space, and I know that all of us have been anxiously awaiting what would open in the spot where so many of us have so many memories of spicy music and loud food!

Let’s Talk Vibes

Walking into Bootsies is like being transported into the most fun parts of your past, with a fun twist on the music and decor. The playlist? A mix of throwback R&B and hip hop that instantly sets the tone for a good time. The space is bright, playful, and full of little details that make it feel like a place where something fun is always about to happen.

The Menu at Bootsies

Let’s start with the star of the show—the food. Bootsies doesn’t just serve up a good meal; they serve up bold flavors with a side of creativity.

The apps at Bootsies were delicious

  • Meatball Dip: It was hearty, cheesy, and delicious. I ate the whole thing and can't wait to order it again. The oven-roasted bread was perfectly warmed with a light glaze of oil, and the perfect side to these meatballs.
  • Salsa Verde Shakshuka: This was my husband's favorite; he actually added some to his burger because he wasn't going to leave a drop behind. I hope this never leaves the menu. If it does, I am going to need to learn to make it at home!

🥗 Salads at Bootsies have a Twist

  • Asparagus & Burrata: Creamy, tangy, and topped with a watermelon balsamic vinaigrette, which is an amazing combination. Served with pizza bread—because who doesn't love carbs?
  • Potsticker Salad: Yep, you read that right. Deep-fried pork potstickers on arugula, cherry tomatoes, and a soy chile vinaigrette.
  • Spicy White Bean Salad: This one packs a punch, thanks to the poblanos and smoked feta. It’s light but still feels like a meal. Dense bean salads are quickly becoming something in my rotation at home, so it is nice to be able to grab one when I am out!

🍕 The Pizzas Are Next-Level

Bootsies pizzas are personal-sized and full of flavor. Here are a few we have tried in our trips to Bootsies

  • Fried Chicken Pizza: A combo that works especially for those who love something with a smoky flavor—parmesan cream sauce, fried chicken, bacon, and honey hot sauce.
  • Mortadella Pizza: I love Mortadella, so I was super excited to give this one a try. It is salty, cheesy, and topped with giardiniera and roasted red peppers. It was delicious
  • Mushroom Pizza: For my veggie lovers—shiitake and crimini mushrooms, goat cheese, herbs, and that dreamy stracciatella. Probably my favorite pizza we have tried, there is just something about a heart mushroom pizza.

🥪 Po’zo Sandwiches

Okay, let’s talk about these. The Po’zo is a spin on the Italian panuozzo—basically a sandwich made from folded pizza dough. Think calzone meets grilled sandwich. We have tried two of them, and while they were both good, the Mortadella won my heart again!

  • Mortadella Po’zo: Shaved mortadella, stracchino cheese, pepperoni, and a punchy hot sauce folded into grilled pizza dough. Salty, spicy, and a little fancy.
  • Prime Rib Po’zo: Yep, there’s prime rib here too—with onions, peppers, and cheddar. Steak sandwich, but elevated.

And if you are looking for a burger, then give their smashed burger a try. My husband ordered this on our last trip in. Bootsie's Smashed Burger is a hamburger patty on brioche, layered with cheese sauce, bacon, and greens.

Weekend Plans? Make Them Brunch at Bootsies

I love that we have a new brunch spot in town. So, if you’re a brunch person, this spot is calling your name. Sunday brunch runs from 10 AM–3 PM and brings a whole new menu to obsess over.

Here are a few standouts:

  • Chilaquiles with scrambled eggs, chorizo, salsa, and quesadilla
  • Monte Cristo Po’zo—yes, it’s French toast and yes, it’s stuffed with prime rib and topped with a fried egg.
  • Aji Verde Hummus: Bright, herby, and perfect for sharing
  • Fried Burrata: Creamy, crunchy, and rich, with tomato sauce and herby goodness
