Get Social With Purple Iris Everywhere!

Fried chicken dinners at the Brookville Hotel always included the famous Brookville Hotel coleslaw. These family style meals were a tradition for many Kansas families and I can't wait for the next chapter with Munson Prime to begin!

If you grew up in Kansas then you probably great up eating chicken dinners from the Brookville Hotel. The Brookville Hotel had been serving up some of the best family-style fried chicken dinners since 1870 in Brookville, Kansas. For those not as familiar with Kansas geography, Brookville, Kansas is about 15 min from Salina, Kansas.

The history of the Brookville Hotel is onto its next chapter with the recent purchase by the Munson Family to reopen the Brookville Hotel adding their fabulous steaks to the menu in addition to the world-renowned fried chicken being served! I for one can't wait!

The fried chicken dinners at the Brookville Hotel are served family-style on Blue Willow serving dishes. The dinners of course include Fried Chicken, pickles, relishes, Pennsylvania Dutch Coleslaw, Mashed Potatoes and Gravy, Creamed Corn, and Biscuits with butter and jelly! These recipes are incredible and are tied to so many of my childhood memories, not to mention the Brookville Hotel is also a recipient of the James Beard American Classic Award. What surprises more people is their willingness to share their recipes.

A quick search if you don't have a personal copy and you can find their coleslaw, biscuit, and creamed corn recipe. Since they are a favorite of ours and a huge part of Kansas history, I decided to share them right here! We are kicking things off with the Brookville Hotel Coleslaw!

Brookville Hotel Sweet and Sour Coleslaw

This coleslaw is the perfect side dish and definitle must be an addition to your summer BBQ!

Equipment

  • 2 Mixing Bowls One to place cabbage in and one for the sauce.

Ingredients
  

  • 1.5 lbs Cabbage Thinly slice the cabbage to bite size pieces.
  • 1 tsp salt
  • 2/3 cup sugar
  • 1/3 cup vinegar
  • 1 cup whipping cream

Instructions
 

  • Chop the cabbage into thin, bite size pieces.
  • Place cabbage into a bowl and cover.
  • Place bowl in the fridge for two hours.
  • After two hours add the cream mixture to the cabbage and place back in the fridge.
  • Wait 30 minuts and serve cold!
