It feels like it's been a long time coming, but Highwind Brewing Company is open in Junction City, KS! For the residents in and around Junction City, KS, if you have not made your way to the new brewing company, run don't walk because it is awesome!
When I first heard that a group of local investors would be putting in a craft brewing company in downtown Junction City, KS, I was excited. It is such a great addition to Junction City, KS, and its downtown. For those not familiar, Highwind Brewing Company is located on the corner of Washington and 8th Street. This location offers ample parking for patrons on either Washington or along 8th.
Since we made our way to Highland Brewing Company last Friday night, I have been raving about it! When you walk into Highwind Brewing Company, you first want to grab a table. Then you can choose from two restaurants, 785 Bistro (opening soon) and Mill Pizza. Mill Pizza is currently the only one serving but that worked perfectly for us. I think it is pretty obvious that we are pizza connoisseurs. After looking at the menu, we knew we had to try several pizzas and if you know me you know this is the hard-hitting research I am about!
Mill Pizza has its take on a variety of classic pizzas on its menu. They also have an option to make your own, plus they also offer a cauliflower pizza crust option. We ordered the Flint Hills Burn, The Margherita, and the Super. Last minute I also ordered a salad, because life is about balance, right?



First up, the Flint Hills Burn, this pizza is topped with their bold red sauce, smoked habanero sausage, grilled chicken, jalapenos, scallions, hot honey, and of course, cheese! This was not over-powering heat and the pizza had a great flavor, we especially loved the mix of fresh and pickled jalapenos. Up next, was the Margherita. This pizza is a classic and had a great flavor, but the drizzle of balsamic glaze completely made the pizza for us. After devouring this pizza, I am not sure if we can ever eat this pizza without balsamic glaze, even at our own home!
Finally, last but not least, the Super! I am a sucker for a supreme pizza, it takes me back to my childhood. My parents always ordered a Pizza Hut Supreme everywhere we went so I knew I had to order it. While this has many components of a traditional supreme topped with red sauce, pepperoni, beef, Italian sausage, onion, bell pepper, mushroom, olives, and cheese, they also add, garlic confit! I love garlic confit and this was the perfect addition to the pizza to give it more of a unique sweet taste than just a traditional supreme.
The Italian Chop salad was a mixed green salad topped with tomatoes, onions, black olives, pepperoncini, onion, pepperoni, ham, and shaved cheeses. The salad was a nice size and loaded with toppings, I actually think I ran out of lettuce! Everything was fresh and I really enjoyed the house dressing that came with it!
Now, do you come for the beer and stay for the food or do you come for the food and stay for the beer? Fortunately, there is no need to choose, because the beer at Highwind Brewing Company in Junction, KS is awesome! Since we are sour beer fans, those were the beers we gravitated to on their menu. The craft beer menu ranges from blonde ales to wheat, and additional flavors from citrus, caramel toffee, bitter, hoppy, and more. The Cadillac Ranch Sour was our favorite of the sours, it was tasty and refreshing, perfect with the pizzas!
The staff was super friendly and helpful from the moment we arrived until we were packing up our leftover pizza and heading out the door. We can't wait to go back and try 785 Bistro when it opens up, along with more pizza and of course, more beers!
