These are Kinda Key Lime Pie cookies because you can make them even without Key Limes. One thing they are for sure is delicious. If you ask my hubby, these are his favorite cookies I have ever made!
A couple of weeks ago my husband was craving Key Lime Pie cookies and there were not any to be found. Remembering that we had some Key Lime Pie M&M's and a bunch of limes at home I thought why not make some myself? Plus, it would do two things, give me a chance to use my Lime icing recipe and be my something green I could bring to my office St. Patrick's Day Potluck.
When I was trying to decide where I wanted to start, I went with my OG, one of my grandma's sugar cookie recipes. Then I opened up my cabinets, and grabbed some white chocolate morsels (sugar-free), graham crackers, and those M&M's! I really love this recipe, it is super easy and because it uses shortening (Crisco), so I don't have to wait for the butter to soften.
The Graham crackers are used two ways, in the batter and on top, it helps to give the texture and a little crunch in lieu of a crust. Plus, mixing the Graham crackers in the batter thickens it up and makes the cookies a little more dense and chewy.
The Lime icing is delicious, it will definitely play on your taste buds, perfectly tart and sweet at the same time. If you can find Key Limes great, if not, regular limes work perfectly! For the white chocolate chips, I do prefer a sugar-free version, Lilly's brand in these. I just feel like they are not as sweet and of course, with all the other sugar in this recipe if you can cut some out, why not!
