Mediterranean Pizza is the perfect combination of the Mediterranean flavors you love and everyone's favorite, pizza!
One of the things I love most about cooking is how inspiration can come from anywhere and at any time! Last Monday, I was watching one of my favorite food and lifestyle bloggers, Gaby Dalkin. Gaby was making Summer Hummus with Ground Lamb and a Tomato Cucumber Salad and per usual, it looked amazing!
I was trying to think how in the world I could get my husband, who is not a fan of hummus to eat this and I thought, pizza! Pizza is how I get him to try anything, and I mean anything, so why not a Mediterranean Pizza?
The changes I made were to make the original recipe to fit our tastebuds. The ingrediant list is almost the same, but fun fact, I do not like raw tomatoes. It is the jelly stuff inside with the seeds, it just doesn't work for my taste buds. I can eat pico on occasion, but other than that, I need those tomatoes cooked someway, somehow! So I swapped out the tomatoes for sweet and spicy peppers to add some flavor and the pop of that bright color then adjusted the ingrediants that we prefer!
Now, onto the hummus, you can of course make your own but I have been super busy, so this time store-bought was the way to go! I suggest buying your favorite, I like either the Sabra brand or the Simple Truth Organic Hummus at Kroger/Dillon's, either plain or garlic is really good.
If you want to be more traditional, you can use Gaby's Summer Hummus as a topping. Or if you are a no-tomato person like me, you can follow my recipe below! Or even better, a combination of the two. It is forgiving and super easy to adjust to what you like and what you have access to!
Mediterranean Pizza
This is the perfect way to combine Mediterranean flavors and everyones favorite, pizza! This makes for a quick and easy lunch and dinner.
1Pizza DoughI divide the dough into two and make two pizzas. I like the pre-made dough at Dillon's or if I have time I use the Dellalo Dough Kit!
1Medium Sweet Onion
1Medium Red onion
1Cucumber
1Block of Feta
19.9 ozHot and Sweet Peppers
16 ozKalamata Olives
16ozHummusSplit container, half on each pizza.
2poundGround Lamb
1 Lemon
2tbspolive oil
1tspGarlic Powder
Instructions
If using store bought dough, remove from fridge and allow to come to room temp.
Pre-heat oven per pizza dough directions
Heat a skillet with a little bit of olive oil or cooking spray.
Dice the medium sweet onion and saute until transcluscent.
Add ground lamb to the skillet and allow to brown. Once almost finished, salt and pepper to taste.
Place one of your pizza crusts in the oven per package cooking directions.
While the lamb is cooking, in a separate bowl, dice your cucumber then chop your hot/sweet peppers, half the block of Feta, half a medium red onion, Kalamata olives.
Once everything is in the bowl. juice the lemon,1 tsp Garlic Powder, add 1 tbsp of olive oil, and finish with salt and pepper to taste. Mix well.
Once you remove cooked pizza dough, allow to cool for a few minutes. Then spread half of the container of hummus on the crust.
Top with ground lamb and your summer mix (peppers, onions, feta, olives, cucumbers).
Slice and enjoy!

This recipe is very forgiving, and if you like more or less of the ingredients just adjust accordingly. Sometimes I make two different kinds of pizza, when I do that I just half the ingredient list and it works great.Any topping leftovers I use for a Greek salad the next day! Perfect to stretch and possibly get two meals out of one.
