This Zucchini Bread is the best you will ever have! This bread freezes great and is a perfect way to use up all that Zucchini from your garden!

It is the time of year, everyone's gardens are either overflowing with produce or being burned by the summer sun! If you see my sister's garden you will quickly realize that she is in the overflowing category! On a recent trip home, she brought a zucchini and some other veggies for my parents to enjoy. While some might have been surprised by the size, we were not. This zucchini was probably two feet long and I am not sure how many pounds it weighed!

As you can imagine, my dad knows me well and knows that if he asks me to bake him something I will, so he promptly asked me to make him Zucchini Bread. I wasn't thrilled, I do not like Zucchini Bread, not sure why, but it has never been my favorite. I mean, I like Zucchini by itself, but not in bread. I decided that if I was going to find a recipe I would like, I needed to go to Grandma's recipes and her recipe books.

It's zucchini season, so it's time to make Zucchini Bread!

I looked at so many recipes, but this one, in particular, stuck out to me when I read one of the ingredients, crushed pineapple. It was the only recipe I found that had it and I love pineapple so I decided it was a sign and as they say, the rest is history! And, now I can say that zucchini bread is amazing, lol!

This recipe was in one of my grandma's Amish Mennonite cookbooks, the Montezuma Amish Mennonite Cookbook. Most people are surprised when I tell them my family was Mennonite and my great-grandfather started the Mennonite church in my mom's hometown. That is a story for another day, we are here to talk about this amazing recipe from this wonderful cookbook!

Instructions on how to make the best Zucchini Bread

  1. Preheat oven to 350 degrees.
  2. Beat eggs, and add sugar, vanilla, and oil.
  3. Stir in zucchini and pineapple.
  4. Mix in Dry ingredients and nuts.
  5. Baker at 350 degrees for 1 hour. Yields 2 breads.

Mennonite Amish Zucchini Bread (The Best Zucchini Bread)

This bread is perfect! It even converted me into a zucchini bread-loving person! The use of crushed pineapple is unusual and adds the right amount of sweetness and compliments the zucchini flavor. While gardens are overflowing with seasonal produce, this recipe will give you another use for zucchini! I am on my sixth loaf and can't wait to enojy it as well as give it as a gift.

  • 1 Mixing Bowl

Ingredients
  

  • 3 cup Flour
  • 1/2 tsp baking powder
  • 2 tsp salt
  • 1 1/2 tsp cinnamon
  • 3 eggs
  • 1 1/2 cup sugar
  • 1 cup oil
  • 2 tsp vanilla
  • 2 cup shredded zucchini
  • 1 8oz can crushed pineapple, well drained
  • 3/4 cup nuts, chopped

Instructions
 

  • Beat eggs, add sugar, vanilla, and oil.
  • Stir in zucchini and pineapple.
  • Mix in Dry ingredients and nuts.
  • Baker at 350 degrees for 1 hour. Yields 2 breads.
