Grandma's Forgotten Cookies

These light and airy meringue cookies are easy to make and best part, you literally put them in the oven and let them "bake."

Equipment

  • Mixing Bowl
  • Stnad or Hand Mixer with wisk attachment

Ingredients
  

  • 2 egg whites
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1 cup chopped nuts (pecans or walnuts work great, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Using a stand mixer or hand mixer, beat the egg whites until stiff.
  • Add sugar, beating until the mixture is shiny and stiff peaks form.
  • Stir in vanilla, nuts, and chocolate chips.
  • Drop spoonfuls onto the prepared baking sheet.
  • Place the cookies in the oven, turn it off, and forget until oven is cool.
  • When oven is cool, remove cookies from cookie sheet.
