Grandma's Peanut Butter Cookies

My Grandma's Peanut Butter Cookies were always a family favorite. There is just something about a warm peanut butter cookie that is so satisfying, especially during the fall!

It has been a minute since I have shared one of my grandma's recipes, but it is time to get another one on the blog and I picked a good one. These peanut butter cookies are easy, chewy, and peanut buttery! They come together super quickly and since they use Crisco, like most of Grandma's recipes, you don't have to wait for butter to soften which is perfect for someone who did NOT plan for a day of baking. Me, I am that person! LOL

As usual, I read through the recipe and quickly realized that Grandma, once again did not list the baking time for these cookies. I went with 10 min in a 350-degree oven, once I took them out I did a quick drop of the pan on the countertop to help make the cookies a little chewier. Then I let them sit on the baking sheet for 5 min., transferred them to a cooling rack and they were perfect!

As you can see by the blurred lettering, this is a well-used recipe card! My mother rewrote this recipe, but if I find it in my grandma's writing, I will upload the original version. Later in my grandmother's life, she did not like her handwriting so when recipe cards got rough and hard to read, she would have my mom rewrite them for her!

These Peanut Butter cookies are perfect for making ahead. It is crazy to think, but the holidays will be here before we know it and if you are like me, the designated baker, I need recipes like this. After I bake all the cookies, I divide them up equally into freezer bags and pop them in the freezer. Even a couple of months later they are still good, plus it makes the holidays that much less stressful! I am all about doing what you can when you can!

How to make Peanut Butter Cookies

  • Cream together shortening, add sugar gradually, creaming these together until well blended.
  • Add eggs and beat mixture.
  • Add Peanut Butter.
  • Sift Flour, soda, and salt together. Add to the above mixture.
  • Stir this until well blended.
  • Stir in Vanilla.
  • Shape dough into small balls and place on an oiled baking sheet (I used parchment).
  • Flatten with a fork until cookies are 1/4" thick.
  • Bake in a hot oven (400 degrees) until a nice brown. (See the blog post about what I used for bake time!)

These peanut butter cookies are absolutely delicious, chewy, and best of all, easy to make! My grandma would always make these for every holiday and special occasion, they are definitely a family favorite!

Equipment

  • 1 Mixing Bowl
  • 1 Cookie Sheet
  • 1 Hand Mixer
  • 1 Cookie Scoop

Ingredients
  

  • 1 cup Shortening
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1 cup Peanut Butter
  • 3 cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Vanilla
